The roots of ramen noodles
are in China, and it was brought to Japan long ago and has evolved
into local cuisine. The dish has become one of the essential foods
in Japan.
When it comes to Japanese favorite foods, Japanese-style curry rice
and ramen noodles always take first and second places. Ramen noodles
are so popular that you can find ramen shops in any town in Japan.
With the popularity of ramen in general, the original ramen from Tokushima
Prefecture in Shikoku area has won popularity nationwide along with
Sanuki Udon noodles.
The main characteristics of Tokushima ramen are the thin, straight
noodles and rich, brown soup topped with flavored beef. It is now
one of the major ramen brands, including Hokkaido's "Sapporo
ramen" and Tokyo's "shoyu ramen" (soy-sauce-flavored
ramen).
